Professor Lujan's Street Taco Recipe
This is probably my favorite meal. I am Mexican American and I grew up in various cities in Los Angeles county in the 1980s and 1990s. With that being said I grew up eating Mexican food not only at home and family members houses but I also ate at the local mom and pops taco stands. I use to frequent taco trucks but have been reluctant to do so after watching Nightmare Kitchen with Gordon Ramsay. Below is a recipe that I made to teach students how to make street tacos Los Angeles style and so they can enhance their vocabulary.
INGREDIENTS:

2 tablespoons reduced sodium soy sauce

2 tablespoons freshly squeezed lime juice

2 tablespoons canola oil, divided

3 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon dried oregano

1 1/2 pounds skirt steak, cut into 1/2-inch pieces

12 mini flour tortillas, warmed

3/4 cup diced red onion
-
1/2 cup chopped fresh cilantro leaves

1 lime, cut into wedges
